Hier stellen wir Ihnen ein Kyoto vor, das Sie vielleicht noch nicht kennen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">1.<em>&nbsp;Sasaki-Brauerei und Yasunari Kawabata<\/em><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Die Sasaki Sake-Brauerei ist ber\u00fchmt f\u00fcr den Schauspieler Kuranosuke Sasaki, aber wussten Sie, dass es sich dabei um einen Sake handelt, der von dem gro\u00dfen Schriftsteller Yasunari Kawabata gelobt wurde?\u3000Kawabata Yasunari ist ber\u00fchmt f\u00fcr Snow Country, aber auch f\u00fcr Ancient Capital, in dem es um Kyoto geht.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Der Sake \"Ancient Capital\" tr\u00e4gt den Namen der \"Ancient Capital\". Kawabata Yasunari war als Feinschmecker bekannt, und Kawabata bezeichnete die \"Antike Hauptstadt\" als \"den wahren Geschmack von Kyoto\".<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Der Text auf dem Etikett wurde von Kawabata Yasunari geschrieben, der von dem Sake begeistert war. Aber warum ist der Sake von Sasaki Shuzo so k\u00f6stlich?\u3000Der Grund liegt im Wasser.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">2.<em>Die Beziehung zwischen Kyoto-Wasser und Kyoto-Alkohol.<\/em><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Urspr\u00fcnglich war Kyoto reich an unterirdischem Wasser, und urspr\u00fcnglich gab es viele Sake-Brauereien in den heutigen Bezirken Kamigyo und Nakagyo. Kinshi Masamune, heute im Bezirk Fushimi, stammt urspr\u00fcnglich aus dem Bezirk Nakagyo. Das Gebiet um die Sake-Brauerei Sasaki tr\u00e4gt immer noch den Namen \"Demizu\". Das Zentrum von Heian-kyo befand sich urspr\u00fcnglich um die heutige Sasaki-Brauerei. Das Gebiet von weiter n\u00f6rdlich bis zur Sasaki-Brauerei hei\u00dft Nishijin. Das Gebiet ist ber\u00fchmt f\u00fcr seine farbenfrohen Nishijin-Textilien, aber zum F\u00e4rben wird auch Wasser ben\u00f6tigt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Und das Wasser von Kyoto wird als das Wasser bezeichnet, das Sen no Rikyu in der Azuchi-Momoyama-Periode f\u00fcr die Zubereitung von Tee liebte. Die Legende von Sen no Rikyu ist in mehreren Brunnen der Stadt zu finden. Das Wasser, das f\u00fcr Tee verwendet wird, sollte arm an Mineralien und mild sein.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dieses Wasser hat n\u00e4mlich einen v\u00f6llig anderen Charakter als das Wasser von Nada in der Pr\u00e4fektur Hyogo, einem anderen Sake-Anbaugebiet in der Region Kansai. Sake, der aus Wasser mit hohem Mineralgehalt hergestellt wird, hat einen starken Geschmack, enth\u00e4lt aber auch Verunreinigungen. Der Gesamtgeschmack des Sake ist kr\u00e4ftiger, und in fr\u00fcheren Zeiten war er als \"Otoko-zake\" (M\u00e4nnersake) bekannt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Es gibt einen Waka-Ausdruck \"masuraburi\", der ein \u00e4hnliches Bild vermittelt. Man kann es sich als einen eher rauen und kr\u00e4ftigen Geschmack von Sake vorstellen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Andererseits wird Sake aus Kyoto, einschlie\u00dflich Fushimi, grunds\u00e4tzlich als \"Frauen-Sake\" bezeichnet. Dies ist ein Ausdruck f\u00fcr seine geschmackliche Leichtigkeit. Er ist leichter im Geschmack als Sake aus Hyogo und Nada, verweist aber eher auf die leichten Aromen der typischen h\u00f6fischen und Yushoku-K\u00fcche Kyotos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Der Geschmack des Sake ist delikat und anmutig, mit einem Bild, das dem des Waka-Ausdrucks \"taho yamaburi\" \u00e4hnelt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Das von der Sasaki Sake-Brauerei verwendete Wasser hei\u00dft \"Ginmeisui\", das besonders von Sen no Rikyu bevorzugt wurde. Der Sake, der mit dem Wasser aus dieser \u00c4ra gebraut wurde, brachte sogar die gro\u00dfen Schriftsteller der Showa-Periode zum Schw\u00e4rmen.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">3.<em>Die Sasaki Sake-Brauerei und die Geschichte Kyotos<\/em><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u00dcbrigens k\u00f6nnen Sie fast alle Sake, die von Sasaki Shuzo verarbeitet werden, am Hauptsitz von Sasaki Shuzo kaufen. Obwohl es im Winter nicht m\u00f6glich ist, Sommersake zu kaufen, sind auch Produkte der Zusammenarbeit und Original-Amazake erh\u00e4ltlich. Der Name des Original-Amazake lautet auch \"Ginmeisui\"!\u3000Er hat den gleichen Namen wie das von Rikyu geliebte Wasser.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nat\u00fcrlich k\u00f6nnen Sie auch die von Yasunari Kawabata geliebte \"Antike Hauptstadt\" kaufen.
