Los lugare\u00f1os obsequiaron a Kenreimonin con encurtidos de shiso, una especialidad de la zona, para recordarle sus d\u00edas pasados. El sabor y el bello color p\u00farpura deleitaron tanto a Kenreimonin que lo llam\u00f3 \"Murasaki-hazuke\" (encurtidos de hoja p\u00farpura), y el t\u00e9rmino \"shibazuke\" arraig\u00f3 m\u00e1s tarde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bfSab\u00eda que existen dos tipos de Shibazuke?<br>Uno es el Shibazuke tradicional, elaborado encurtiendo shiso rojo y berenjenas s\u00f3lo con sal y utilizando el poder de las bacterias l\u00e1cticas adheridas a las berenjenas y al shiso rojo, o \"fermentaci\u00f3n l\u00e1ctica\". Se caracteriza por su textura h\u00fameda, su riqueza y su acidez, y se vende con el nombre de \"Shibazuke fresco\" para diferenciarlo de los procesados con vinagre sazonado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El otro es el Shibazuke, que se elabora encurtiendo kyuri (pepino) o berenjenas en sal y luego marin\u00e1ndolas en un vinagre encurtido al estilo del Shibazuke. Adem\u00e1s, siempre intentan no ser intrusivos y aspiran a una cocina sencilla, sin excentricidades.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Komatsu Kelp, representante de Ungetsu, es un excelente producto nacido de la idea de la cocina kaiseki. Cuando la cocina kaiseki llega al punto de los platos de arroz, hay momentos en los que la gente quiere beber un poco m\u00e1s de sake pero sigue teniendo hambre, por lo que se cre\u00f3 Komatsu Kelp en busca de un sabor que no fuera salado, suave ni amargo.<br>Es considerablemente m\u00e1s fino que el alga salada ordinaria y tiene un tacto suave y sedoso.
