On dit que manger un g\u00e2teau de riz en forme de sanglier le premier jour de la f\u00eate du sanglier en novembre (vers 22 heures) permet de se pr\u00e9munir contre toutes les maladies.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c0 l'origine, cette pratique avait cours \u00e0 la cour pendant la p\u00e9riode Heian (794-1185), sur la base d'un vieux dicton chinois selon lequel il s'agissait d'un sortil\u00e8ge pour la sant\u00e9. Dans le Conte de Genji, les g\u00e2teaux de sanglier apparaissent dans une sc\u00e8ne de la deuxi\u00e8me nuit du mariage de Hikaru Genji et Murasaki no Ue.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il existe plusieurs th\u00e9ories sur la fa\u00e7on de pr\u00e9parer les g\u00e2teaux de riz au buccin de sanglier, mais il semble qu'ils soient faits en m\u00e9langeant le nouveau riz r\u00e9colt\u00e9 cette ann\u00e9e-l\u00e0 (g\u00e2teau de riz) avec sept types de farine - soja, azuki, s\u00e9same, ch\u00e2taigne, kaki, ni\u00e9b\u00e9 et sucre - pour former la forme d'un buccin de sanglier.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Toutefois, les ingr\u00e9dients, les m\u00e9thodes de production et les motifs utilis\u00e9s varient d'une r\u00e9gion \u00e0 l'autre et d'un magasin de wagashi \u00e0 l'autre, certains \u00e9tant dot\u00e9s de trois bandes comme l'Uribo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u25a0 G\u00e2teaux de riz de sanglier provenant de confiseries \u00e9tablies de longue date \u00e0 Kyoto.<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Jetons un coup d'\u0153il sur le mochi de sanglier de certaines confiseries japonaises \u00e9tablies de longue date \u00e0 Kyoto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La confiserie Laomatsu.<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Laomatsu est une confiserie de Kyoto \u00e9tablie depuis plus de 100 ans \u00e0 Kamishichiken, une rue fleurie situ\u00e9e non loin du sanctuaire Kitano Tenmangu.<br>\u201cLe terme \u201dYushoku confiserie gochosho\" indique que la confiserie \u00e9tait utilis\u00e9e pour les c\u00e9r\u00e9monies et les festivals de la cour imp\u00e9riale depuis les temps anciens et qu'elle est toujours une confiserie qui s'efforce de promouvoir la confiserie de Kyoto en tant que partie int\u00e9grante de la culture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les vieux g\u00e2teaux de sanglier sont d'une couleur brune relativement fonc\u00e9e.<br>La p\u00e2te \u00e0 mochi est l\u00e9g\u00e8rement plus \u00e9paisse et, heureusement, elle est envelopp\u00e9e de p\u00e2te de haricots doux et de ch\u00e2taignes hach\u00e9es ! Y a-t-il un peu de jaune qui transpara\u00eet ? M. Taizaburo Ota, la premi\u00e8re g\u00e9n\u00e9ration, a cr\u00e9\u00e9 son propre \u00e9tablissement, Kagijin Ryobo, pr\u00e8s de la porte ouest du temple Kenninji, \u00e0 Kyoto, apr\u00e8s avoir pris son ind\u00e9pendance par rapport \u00e0 son poste de chef de banto de Kagizen Ryobo \u00e0 Gion, Kyoto. En 2019, le nom du restaurant a \u00e9t\u00e9 chang\u00e9 de Kagijin Ryobo \u00e0 Kagijin.<br>Outre les techniques, les ingr\u00e9dients et les ar\u00f4mes traditionnels, de nouvelles id\u00e9es en phase avec l'\u00e9poque sont incorpor\u00e9es dans le processus de production des confiseries.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le Mochi de l'enfant de sanglier de Kagijin est compos\u00e9 de galettes de riz Haniujie tr\u00e8s moelleuses et saupoudr\u00e9 de graines de s\u00e9same noir. La p\u00e2te de haricots rouges est sucr\u00e9e et contient des kakis s\u00e9ch\u00e9s et des noix de ginkgo, ce qui lui conf\u00e8re une parfaite saveur automnale.<br>Cela m'a rappel\u00e9 une fois de plus que les g\u00e2teaux de riz de sanglier sont fabriqu\u00e9s avec originalit\u00e9 et ing\u00e9niosit\u00e9 par diff\u00e9rents magasins. La premi\u00e8re g\u00e9n\u00e9ration de Suehomi a \u00e9t\u00e9 form\u00e9e chez Kame Suehiro, une confiserie japonaise \u00e9galement situ\u00e9e \u00e0 Kyoto, et a ouvert l'entreprise en tant que succursale de la bonne volont\u00e9. Depuis la premi\u00e8re g\u00e9n\u00e9ration, Suefu est au service du temple Higashi Honganji et de la famille Urasenke, fabriquant des confiseries qui ne sont pas produites en masse et qui sont faites avec le c\u0153ur. Parall\u00e8lement, l'entreprise allie tradition et innovation en lan\u00e7ant une nouvelle marque de confiserie, \"SUETOMI AoQ\" (Suetomi AoQ), qui allie les sensibilit\u00e9s de la confiserie de Kyoto aux sensibilit\u00e9s modernes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les g\u00e2teaux de riz au sanglier de Suefu sont d'un brun moyennement fonc\u00e9. [Senbon Gyokushuken].<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">L'origine de Senbon Gyokushuken \u00e0 Nishijin, la ville du textile, est un atelier de tissage.<br>\u00c0 l'\u00e9poque Kansei (fin de la p\u00e9riode Edo), pr\u00e8s de Senbon Imadegawa-agaru, un tisserand Izutsuya produisait et vendait des confiseries tout en travaillant sur le m\u00e9tier \u00e0 tisser, ce qui \u00e9tait tr\u00e8s populaire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au milieu de l'\u00e8re Taisho (1912-1926), l'ancien magasin de la p\u00e9riode Edo a \u00e9t\u00e9 d\u00e9plac\u00e9 \u00e0 Imadegawa Omiya pour l'agrandissement de la route, mais la production de confiseries s'est poursuivie dans une partie du b\u00e2timent qui avait \u00e9chapp\u00e9 \u00e0 la d\u00e9molition.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La g\u00e9n\u00e9ration pr\u00e9c\u00e9dente s'est entra\u00een\u00e9e au Honke Tamasuken et est devenue ind\u00e9pendante en 1938, et le Senbon Tamasuken a \u00e9t\u00e9 \u00e9tabli sur le lieu de naissance de l'ancien Honke Tamasuken.<br>La c\u00e9l\u00e8bre confiserie \"Nishijin Flavour\" a \u00e9t\u00e9 invent\u00e9e sur le motif de la beaut\u00e9 des textiles de Nishijin, et est v\u00e9ritablement une confiserie \u00e9l\u00e9gante nourrie par l'histoire de Nishijin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Actuellement, la troisi\u00e8me g\u00e9n\u00e9ration de la famille continue \u00e0 fabriquer des confiseries en utilisant des ingr\u00e9dients naturels et des m\u00e9thodes traditionnelles, tout en adaptant leur production aux besoins modernes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les mochi de sanglier de Senbon Tamajushuken contiennent des grains de p\u00e2te de haricot sucr\u00e9e.
