Nishiki Market is called the kitchen of Kyoto. It is the oldest shopping street in Kyoto with a history of 400 years, and is lined with stores selling many Kyoto ingredients such as yuba (bean curd), Kyoto vegetables, and Kyoto pickles.
There was Inoue Tsukudani, a delicatessen with a 135-year history. They sold a variety of menu items, from the royal roadside items such as chirimen sansho and manganji togarashi kelp, to innovative items such as chocolate croquettes, and seasonal obanzai. These obanzai have a simple flavor that makes the best use of the ingredients, and somehow gives you a sense of sweetness and nostalgia. Since they were sold by weight, customers were familiar with the face-to-face sales method, where customers and clerks interacted with each other while making purchases. It continued to be loved by a variety of customers, including daily commuters and those who always come when they visit Kyoto, and was one of the oldest establishments in Nishiki Market, but it suddenly closed in December 2019.
■Resurrection of "Inoue Tsukudani Shop

Inoue Tsukudani Shop was established in 1884 (Meiji 17). They decided to close the business due to changes in the business environment and lack of successors.
When customers were filled with grief, President Shun Fujita of Friend Foods, a supermarket in Sakyo-ku, Kyoto, initiated a plan.
Originally, Friend Foods, run by President Fujita, and Inoue Tsukudani had been in business relationship for 30 years. They also ordered food products for Osechi (New Year's Eve) to be sold at the end of the year from the supermarket. Such is the nature of this relationship,
We want to deliver the genuine taste to the local people.
I want to leave a taste for tourists.
With this in mind, the president persuaded Umemura, the owner of the Inoue Tsukudani restaurant, for more than six months.
Recipes and other items were disposed of, but Umemura and three members of his family decided to work for Friend Foods as employees, and the flavors of the Inoue Tsukudani Restaurant were finally restored.
They created about five different prepared dishes in the Friend Foods kitchen in no time. Even though there were no recipes, the seasonings and methods of preparation were imprinted in his memory.

pot-bellied and bitter melon
Chirimen Sansho
Manganji Togarashi Kelp
and dozens of other delicacies, and is decorated with a plaque that reads "Nishikikoji Inoue, founded in 1878.

In 2020, Umemura, the owner of the Inoue Tsukudani Shop, accepted his persuasion and began selling the Inoue Tsukudani Shop flavor again.
The location is "Friend Foods Shimogamo" in Shimogamo, Sakyo-ku.
The store is lined with fresh produce, including rare vegetables and fruits, and high quality products. In the deli corner, which is one of the most popular areas in the store, you will find a lineup of flavors prepared by Umemura.
Adding just one side dish to your regular dinner table will enrich it, and you will be able to enjoy Kyoto's traditional cuisine.
