First, in April, you can eat dishes using bamboo shoots at several restaurants in Nagaokakyo City. Then, farmers' stores start selling bamboo shoots here and there, so you can not only eat them but also buy them to make your own favorite dishes.

○Bamboo shoot steak
The first recipe we will introduce is an easy and stylish one: bamboo shoot steak.
Prepare two bamboo shoot tops, wood buds and seasonings.
First, cut the bamboo shoots in half lengthwise and make diagonal slits on both sides.
Then, make the sauce by adding 1.5 tablespoons soy sauce, 4 tablespoons mirin and 1.5 tablespoons sake to a frying pan or small saucepan.

○Bamboo shoot tsukudani

It can be made with about 500 g of bamboo shoots, 1/2 cup of sake, and about 2 cups of broth plus seasonings.

Then add 1/2 cup sake, 5 tablespoons mirin, 4 tablespoons soy sauce, and 3 tablespoons sansho nuts and cook for about 15 minutes, stirring and leaving the broth.

A recommended warming side dish is "Soboro ni nimono (bamboo shoots simmered in minced chicken broth).
First, cut 300 g of bamboo shoots into bite-sized pieces and return the dried shiitake mushrooms to their original size in water. Keep the rehydrated water and cut the shiitake mushrooms into dice with the shafts cut off.
Put salad oil in a heavy pan and saute leek and ginger over low heat. After a short while, saute ground meat and shiitake mushrooms.
When cooked, add 2 tablespoons sake, bamboo shoots, stock, 1 cup water, and 3 tablespoons soy sauce over medium heat. If any scum comes out at this time, remove it thoroughly for a more delicious result.
